🚫 Never Put These Knives in the Dishwasher

This is the single most important rule. Dishwasher detergents are harsh and highly alkaline — they will strip the protective oil from the blade, dull the edge, and can cause pitting and corrosion over time. The high heat and turbulent water also stress the handle materials and can loosen the scales. Always hand wash.


Washing Your Knives

Only wash your knives when they have been used to cut raw meat. For all other use — vegetables, bread, cheese, cooked foods — simply wipe the blade clean with a dry cloth or paper towel immediately after use. There is no need to introduce water unless food safety requires it.

When washing is necessary:

  1. Hand wash with warm water and a mild dish soap. This will safely remove any residual protectant oil and food debris.
  2. Use a soft cloth or sponge — never steel wool or abrasive scrubbers.
  3. Wash the blade by wiping away from the edge to protect both the blade and your fingers.

Drying

Dry your knives immediately and thoroughly after washing. Do not allow them to air dry or sit wet — even briefly. Use a clean, dry cloth and wipe the blade from spine to edge. Pay attention to the area where the blade meets the handle, as moisture can collect there.


Oiling — Extra Virgin Olive Oil Only

Once dry, apply a light coat of extra virgin olive oil to the blade before storing. We specifically recommend extra virgin olive oil because it is the only common cooking oil that does not go rancid over time. Other cooking oils — vegetable, canola, sunflower — will oxidize and leave a sticky, foul-smelling residue on your blade. Extra virgin olive oil remains stable and food-safe.

To oil your knife:

  1. Apply a small drop of extra virgin olive oil to a clean cloth or paper towel.
  2. Wipe a thin, even coat across both sides of the blade.
  3. Buff off any excess — you want a light protective film, not a heavy coating.

Storage

Return your knives to the suede roll for storage. The roll protects the edges, keeps the blades separated, and allows air circulation. Never store loose knives in a drawer where blades can contact each other — this dulls edges quickly and is a safety hazard.
